The official kickoff for Summer 2018 is finally here!! Memorial Day Weekend has been the beginning of Summer for years! So many people start it off with back yard bbq’s beach trips and more!

When invited to a cookout or any event it’s always nice to bring the hostess a gift. It’s a small token of appreciation for all of their hard work and thoughtfulness.

Foodie of the Month

Happy Marvelous Monday!!  I hope you all had a wonderful weekend! I can’t believe this is the last day of February.  It is time to share a fabulous recipe from another cooking diva!

I am so excited to introduce the foodie of the month for February because I have known her since middle school. Kristen Moss is the foodie of the month and she such an inspiration for the road to living a healthy lifestyle.  I love cooking but want to share more healthy recipes this year because health equals wealth.  I hope you all enjoy this Kristen’s recipe.

How long have you been cooking?

I have been cooking for as long as I can remember! The way I’ve been cooking has distinctively taken an abrupt change. Cooking has always been a first love!
2. Why do you enjoy Cooking?
Cooking has been an adventure to me. I have always loved creating my own personal spin on “your traditional staples” in the kitchen. Recently I’ve been able to make some lifestyles changes, I’ve traded in an evening of fresh baked brownies with two scoops of vanilla ice cream at 11:30pm, for homemade “yogurt bites” with granola garnished with fresh blueberries! (Pause) I have to LOL sometimes when I think of the dramatic food changes in my life. The constant balancing act of daily food choices has been amazingly exciting!
3. Who taught you how to cook?
If I think back and try to identify my earliest memory of cooking…I would have to say my Mother and my Father. My father loved to cook! He would often cook “Peas and Rice” a staple from Nassau, Bahamas from which he was born. This dish would have many layers, seasonings, and spices. I would walk in the house after school and it would be filled with the smell of sautéed onions and green peppers, and bacon slowly cooking in the skillet in preparation for the dish. As a youth I would watch him mindfully take such pride in what he would be preparing for his family. He enjoyed cooking and seeing our faces and our compliments like, “Now you put your foot in this Daddy”! I would say that’s where my love of cooking comes from.
4. What is your favorite thing to make or a great cooking tip?
I can’t say that I have a favorite “meal” to cook, but I can say I have a particular way of cooking which is very health conscious. A great cooking tip would be to try to find healthy alternatives to the food you already love! For all those ice-cream lovers like myself finding an alternative is often a challenge, and still satisfy that sweet tooth. Bananas have became a staple in my home.
Banana Ice Cream
3-4 Banana Frozen/Sliced
1 Spoonful of organic Peanut Butter
2-3 Cocoa Powder
For this recipe you will defiantly need a food processor or blender! Blend to smooth consistency! Enjoy! Half the Calories!
5. Do you have a favorite famous cook/foodie?
I cant say I have a favorite cook that I follow,  enjoy tweaking traditional recipe’s and putting my own spin on them is something I enjoy. ‘m sure I will attain my favorites along this “healthier me” journey. It’s so exciting! Nutrition has now become my passion. I get excited about educating others of the benefits of healthy eating, and exercise has impacted and changed my quality of life. I’m not where I want to be…but I’m certainly not where I used to be. I Never Knew How Bad I Felt Until I Started Feeling Better!

White Chocolate Strawberry Bars

It is so hard to believe summer is coming to an end and back to school time is here already. I love strawberries all year long but, I know they are very popular in the summer season. I just had to get in one strawberry recipe on the blog before the season ends. I made these white chocolate strawberry bars from a lemon bar recipe. I believe cooking is all about remixing and experimenting with different flavors. They turned out great on the first try and I have been making them ever since. I hope you enjoy!

1 Box of Strawberry Cake Mix
3 Eggs
¼ cup of white chocolate chips
3 Cups of Confectioner’s Sugar
1 Stick of Butter (Melted)
1 8oz Block of Cream Cheese

In a bowl combine strawberry cake mix, 1 egg, and 1 stick of melted butter. Mix all 3 ingredients well. Spray a 9 x 13 baking dish with Baker’s Joy. Add cake mixture in the baking dish and spread across the whole pan. Add white chocolate chips on top of cake mixture. Mix 3 cups of confectioner’s sugar, 2 eggs, and 1 block of cream cheese together with a mixer. Pour cream cheese mixture on top of cake mixture. Bake on 350 for 45 minutes to 1 hour. Enjoy!

White Wine Berry Spritzer

This white wine berry spritzer is the perfect cocktail for your party on the patio this summer! It is light and so refreshing! It is amazing how something so quick and easy taste so good. This cocktail will be added to your recipe rolodex! Cheers!


1 bottle of White Wine (I used Moscato)
1 lemon lime soda or bottle of sparkling water
Strawberries and Blueberries for garnish

1. Pour each glass half full with white wine
2. Top each glass off with soda or sparkling water
3. Drop a few Berries of your choice on top (I used strawberries and blueberries)



Pineapple Lemonade

Happy Memorial Day!
Nothing says summer like a tall glass of lemonade. This easy pineapple lemonade recipe will have your guest raving for more. With the hot and sunny days ahead this lemonade recipe will be a must for your menu planning.

1 lemon
2 quarts of Country Time Lemonade
1 cup of sugar
1 8oz can of pineapple chunks
1 6oz can of pineapple juice

Mix all ingredients in a 2 quart pitcher and fill with water. Cut the lemon in half and squeeze half in the pitcher. The remaining half will be sliced and added to the pitcher.

Bonus Tip: Add Sprite or Ginger Ale to make it a punch!


Key Lime Pie

Summer is almost here and that means barbecues in the backyard! Make this simple Key Lime Pie for your next BBQ or Potluck event. It is very light, refreshing and easy. Happy Cooking!!


Key Lime Pie


1 can condensed milk
2 packages of lemon –lime Kool-Aid
2 key lime yogurts
2 tablespoons of key lime juice
2 8oz cool whip
2 graham cracker crust


In a large bowl add condensed milk, Kool-Aid, yogurt, cool whip, and key lime juice. Mix all ingredients together and pour over graham cracker crust. Let the pie chill in the refrigerator for a 2-3 hours .

Bonus Tip: This is a great dessert for mini dessert cups. You can buy whole graham crackers and crush them up and layer the dessert cups with graham crackers and pie filling. You can also use any flavor Kool-Aid to make a different flavor pie.
