Butterscotch Cake

I hope you all had a wonderful weekend!! I can’t believe we are 15 days away from Christmas!!! I tried several new recipes for Thanksgiving and they all turned out great!

I came across this butterscotch cake recipe in a cookbook from my Granny so it’s special to me!! It is a easy recipe but the cake is delicious and moist! It will be the perfect addition for your Christmas potluck or Christmas Dinner!!!

Ingredients

1 Yellow Cake Box Mix

1 cup of oil

1 cup of sour cream

1 cup of Butterscotch Chips

4 eggs

Directions

1. Preheat oven to 350

2. Mix all ingredients in a bowl

3. Spray your Bundt Cake pan with Bakers Joy or your choice of cooking spray

4. Pour cake mix in your pan and bake for 45 minutes to an hour

Chocolate Chip Bundt Cake

I am so happy the weekend is here!  We will have beautiful weather this weekend in Birmingham, AL so, that makes it even better!

Omg,  when I tell you this chocolate cake is to die for.  It is delicious and so moist.  I made it for the first time for Thanksgiving for a tester and just fell in love.  One of my aunt’s makes a delicious chocolate cake and several people in family agree that this cake is just as good as the one she makes from scratch.

I have paired the cake with vanilla ice cream, chocolate syrup, and it just makes it even better! I hope you love it as much as my family and I.  Happy Baking!!

Ingredients

1 Yellow Box Cake Mix

1 box of Hershey Chocolate Pudding

1 cup of chocolate chips

1 cup sour cream

1 cup of oil

4 eggs

Directions

Mix all of your ingredients in a large bowl and mix well.  Spray your bundt cake pan with Baker’s Joy cooking spray and pour all of your ingredients in the bundt cake pan. Bake cake for 40-45 minutes on 350.

Walking Tacos 🌮

It’s almost time to celebrate Superbowl 52 the biggest football game of the year! Even if you don’t like to watch football you can enjoy the yummy food, family, friends, and commercials!  Let me help you make the right call for the game with adding walking tacos to your game day spread!  I was introduced to walking tacos in High School and have been a fan ever since.  Walking Tacos are so fun and easy to make!! It’s basically a taco salad in a bag.

Win or lose walking tacos will help you be the MVP in the Kitchen!!Walking Tacos

Ingredients

1 pound of ground turkey or beef

1 package of taco seasoning (McCormick, Taco Bell, etc) I love McCormick seasonings!!!

Shredded lettuce

Shredded Cheese

Sour Cream

Tomatoes

Taco Salsa or Sauce

Optional: Jalapenos, Black Beans, Corn, and Onions

6-8 bags of small chips (Doritos, Fritos, or any other chips of your choice)

Directions

Cook ground turkey or beef in a skillet until brown, drain grease from meat. Add taco seasoning and cook according to directions on the package.

Carefully open one bag of chips and add your meat along with other toppings. Don’t add too much because you have to mix it all together. Eat with a fork and enjoy

Pineapple Lemonade🍋BHM Potluck

Hello February!!

As a little girl I remember my mommy preparing dishes for potlucks she would have at work but funny thing is they called them pitch –ins. (lol)  I had so much fun helping her prepare dishes for the pitch –ins and would also love that she would bring home some yummy food from the other teachers.  With all of the experience I had as a little girl I feel like I was born a Potluck Queen. I love creating wonderful dishes and beverages with love just like my mommy did when I was a little girl.

February is full of different holidays that give you the opportunity to have a great potluck. I am excited to be a part of the virtual Black History Potluck along with 27 other amazing food bloggers. You can’t have a good potluck without a party punch.   I am bringing Pineapple Lemonade to the potluck.  When I say this drink is good it is good!

Ingredients

1 lemon

2 quarts of Country Time Lemonade

1 cup of sugar

1 8oz can of pineapple chunks

1 6oz can of pineapple juice

Instructions

Mix all ingredients in a 2 quart pitcher and fill with water. Cut the lemon in half and squeeze half in the pitcher. The remaining half will be sliced and added to the pitcher.

Lemon Pudding

Hello!!

I hope you all had a wonderful Christmas!!  I had A Very Merry Christmas and looking forward to the NYE celebration.  Can you believe we only have one more day left in 2017?

What are your plans for NYE?  If you are having a vision party, house party, or celebrating at home I have the perfect dessert for you.

I am so excited that Nilla wafers have a lemon flavored cookie and it is delicious!!  I couldn’t wait to create a recipe with the cookies.  My recipe is full of lemon flavor and will be really cute in mini dessert cups.  I am already thinking of what else I can add to this recipe to make it better or just a whole new twist.  I hope my recipe is a hit in your house or party! Let me know your thoughts and what you think I can add to make this recipe even more delicious.

 

Ingredients

1 box of Lemon Nilla Wafers

1 8oz block of Philadelphia Cream Cheese

1 can of Sweetened Condensed Milk

1 8oz tub of cool whip

1/2 cup powder sugar

2 large freshly squeezed lemons

 

Instructions

Allow your cream cheese to soften ahead of time.  Once your cream cheese is nice and soft beat the cream cheese and powder sugar together.  Next add your condensed milk, cool whip, and lemon juice from your fresh squeezed lemons.

Layer your cookies in the bottom of the pan and add mixture on top of the cookies.  Continue to repeat steps with layers until you run out of mixture.  Allow dessert to cool in the refrigerator for 1-2 hours.  This is also a quick and easy dessert that will save you time if you make it the night before too.

Lemon Bars

I love baking and with the holiday season here it is the perfect time to bake and share your sweet treats with family, friends, and more. My easy lemon bar recipe will be a perfect treat for you to make and share during the holiday season.  You can wrap them in the cutest clear packaging. Glad has some of the cutest packaging for all of your holiday baking needs.

I remember tasting a lemon bar for the first time and I immediately fell in love! I absolutely loved them and wanted to learn how to make them.  I just love the rich flavor and cake brownie texture.  I have already remixed the recipe with some white chocolate strawberry bars which are delicious too!

 

 

 

 

Ingredients
1 Box of Lemon Cake Mix
3 Eggs
3 Cups of Confectioner’s Sugar
1 Stick of Butter (Melted)
1 8oz Block of Cream Cheese

Instructions

In a bowl combine lemon cake mix, 1 egg, and 1 stick of melted butter. Mix all 3 ingredients well. Spray a 9 x 13 baking dish with Baker’s Joy. Add cake mixture in the baking dish and spread across the whole pan. Mix 3 cups of confectioner’s sugar, 2 eggs, and 1 block of cream cheese together with a mixer. Pour cream cheese mixture on top of cake mixture. Bake on 350 for 45 minutes to 1 hour. Enjoy!


Taco Dip

Hope you all had a wonderful weekend!! We are one week away from one of the biggest games of the year! Next week at this time everyone will be cheering for their favorite NFL team for Super Bowl 51.
I am so excited to share a new dip recipe with you but sad because I totally forgot to take a picture before everyone started digging in.

This taco dip is absolutely delicious and so easy to make.  I apologize in advance for helping you break your diet plans!
Ingredients

1 Pound of ground turkey or beef

1 16oz of refried beans

1 4oz can of diced green chilies

1 pack of mild McCormick taco seasoning mix

1 8oz block of cream cheese

1 cup of shredded Mexican cheese
Instructions

Fry your ground turkey or beef in a skillet until brown. Drain grease from the meat and add your pack of taco seasoning and follow directions on the package.

After your meat is seasoned with the taco seasoning add your meat to a baking dish mix in your refried beans and green chilies until all ingredients are mixed well together.

Add your cream cheese to the top of your meat mixture and bake on 350 until cream cheese is soft enough to spread across the whole top of the dip. Add the cup of shredded cheese and put back in the oven just long enough for the shredded cheese to melt.

Serve dip with tortilla chips!

Taco Salad Cassorole 

Hello October!!

I believe fall is for casseroles and comfort food.

It is such a pleasure to be a part of the Southern Women’s Show this year in Birmingham, AL.  I felt my taco salad casserole would the perfect fall dish to share with the audience.
I shared an easy taco salad casserole recipe on the cooking stage on Thursday.  It was a big hit and everyone loved it.  The guest were so excited to see how you can take a taco salad and turn it into a totally different meal by just substituting one ingredient.

My taco salad casserole recipe will be great for an easy week night meal, Cinco De Mayo, game day and many more.

 

Ingredients

1 8 oz can  original crescent roll

1 16 oz of ground turkey

2 cups of original shredded Velveeta cheese

1 package of McCormick Taco Season

1 can of Pam Spray

Instructions

Spray the glass baking dish with pam spray  and press the crescent rolls out in the glass baking dish. Bake the crescents on 350 until brown.

Fry the ground turkey until brown and drain the grease off.  Add your McCormick taco season to your ground turkey and follow instructions on the package.

Add your ground turkey on top of the crescents and sprinkle the shredded cheese on top.  Place the casserole back in the oven for 5-10 minutes or until the cheese has melted.

Optional Additional Toppings:  Lettuce, Tomatoes, Sour Cream, Taco Sauce, Jalapeno Peppers

 


Mini Poppy Seed Sliders

I just love party food and these little mini sliders are always a big hit at celebrations. I was first introduced to these sandwiches at a potluck for work and immediately loved them.  I had to get the recipe and turn it into my own.  They are the perfect little snack, so warm and gooey! Once you taste them you will love them too!

Mini Poppy Seed Sliders

1 Pack of 12 Hawaiian Rolls

¾ pound of Deli Meat (Turkey or Ham)

12 slices of Cheese (I have used Mozzarella, Havarti, Colby Jack and Sharp) they all work great!

1 stick of butter

1 tablespoon Brown Sugar

1 teaspoon Worcestershire’s sauce

2 tablespoons Honey Mustard

½- 1 teaspoon Minced Onion

Poppy Seeds

 

Open each roll and add a slice of deli meat of your choice on the bottom of the roll. Add a slice of cheese on each slider.  (You can cut cheese in half to fit on roll)  Add the top of the dinner rolls to each slider.

 

In a small sauce pan melt your butter and add the Brown sugar, Worcestershire’s sauce, honey mustard, and minced onion. Pour Butter mixture over the sliders and sprinkle poppy seeds on top after the butter mixture.  The butter will help the poppy seeds stick.

 

Bake in the oven on 350 F for 10-15 minutes’ or until cheese is melted and the sliders look yummy and gooey!!

 

Tips: Fresh Deli Meat is the best,  Try to serve them hot
